Dry Aging Process
Our beef is dry aged for 20 days. During this period the sirloins undergo enzymatic changes that intensify flavor, deepen the color & tenderize the meat by softening the connective tissue. We then broil our steaks on the open grill, for a meaty aroma, a buttery & nutty taste, with a whiff of game & earth. Only available at Charivari.
