White Asparagus Truffled Pork MedaillonsHollandaise Sauce

Greek Salad
The combination of juicy, ripe tomatoes and black olives is a classic partnership in Mediterranean cooking, but creek cooks also add feta cheese for a contrasting salty flavor.

9 oz. Feta cheese
9 oz. Cucumber
9 oz. Greek kalamata olives
1 red onion or 4 scallions
2 large ripe juicy tomatoes
1 tsp. honey
3 tbsp. extra virgin olive oil ½ lemon

Cut the feta cheese and tomatoes in cubes, cucumber and onion in ½ inch slices and toss al the ingredients together with the pitted olives, season with pepper and salt, garnish with fresh oregano and serve chilled, with pita bread.
